Raffles Bali and Syrco BASÈ proudly unveil an exciting collaboration featuring Chef Gaetan Biesuz of Raffles Bali and Chef Syrco Bakker of Syrco BASÈ. This partnership brings together two award-winning venues to host a one-of-a-kind culinary exploration, set against the backdrop of Bali's natural wonders: the charming seaside of Jimbaran Bay and the serene heart of Ubud, Bali's cultural and spiritual centre. Each location offers a unique approach to nature-inspired ingredients and fosters meaningful connections with the wider community.
Perched on a hill with breathtaking views of Jimbaran Bay, Rumari, meaning the "House of the Sun and the Full Moon," is a fine dining destination at Raffles Bali. Under the leadership of Chef Gaetan Biesuz, Rumari is inspired by strong connections with likeminded trade partners, including farmers and artisanal producers. Each dish on the menu is a journey into the captivating corners of Southeast Asia, showcasing its culinary savoir-faire in a contemporary style. Guided by the 80/20 rule, Rumari's menu highlights fresh produce, with 80% of the ingredients sourced from the Indonesian archipelago and the remaining 20% imported only when necessary.
Chef Syrco Bakker embraces the fertile soil of Bali with the opening of Syrco BASÈ in January 2024. Having most recently led the two-Michelin-starred Pure C restaurant in The Netherlands and worked alongside some of the best in the culinary world.
The four-hand collaboration took place on 9 September 2024 at Rumari, featuring a theme of “Sea and Ocean,” and will take place on 4 October 2024 at Syrco BASÈ, with a theme of “Land, Jungle and Mountain.”

Banyan Group has launched its flagship Banyan Tree brand in Japan with the opening of Banyan Tree Higashiyama Kyoto in Kyoto’s historic Higashiyama Ward. This luxurious hotel features 52 guest rooms, a renowned Banyan Tree Spa, a natural onsen, and two unique dining experiences. It stands out as the only hotel in Kyoto with a Noh stage, blending the city’s rich cultural heritage with the luxury and service synonymous with the Banyan Tree brand.
