True North Adventure Cruises has added a second vessel to its fleet. The TRUE NORTH II was re-launched today following extensive refit in Fremantle. The 36-metre adventure-yacht is now set to join the TRUE NORTH on Western Australia's Kimberley coast. Both vessels will provide guests with unparalleled access to spectacular coastal wilderness.
Speaking at the launch ceremony, True North's founding director, Craig Howson, said “No expense has been spared in making sure that TRUE NORTH II meets True North's exacting standards when it comes to onboard facility and comfort. Guests travelling on TRUE NORTH II will be able to avail themselves to the same experiences as those offered on the TRUE NORTH. The only difference is that the more compact nature of TRUE NORTH II will allow us to provide those same experiences for generally 25% less when compared to cabin prices on the TRUE NORTH!”
TRUE NORTH II will have capacity for 20 guests and just like the TRUE NORTH, it will feature dedicated adventure boats and a ship's helicopter. TRUE NORTH II's sailing schedule had commenced on April 5 and in many instances, it complements the TRUE NORTH's schedule, however new itineraries include fishing and snorkelling at the Montebello Islands, seeing the solar eclipse at Ningaloo Reef, new 4 and 10-night adventures in the Kimberley, 13 nights on the Great Barrier Reef and a 7-night itinerary ideally suited to charter that will feature Christmas and New Year in Sydney. NEW Gippsland Winery Restaurant & Accommodation - Carrajung Estate
Gippsland's brand new Carrajung Estate is set to launch on Friday March 31 when the restaurant doors will open, together with bookings for 'The Nest' from 7 April onwards.
The restaurant will be led by head chef Patrick Haney and will showcase the unique flavours of the region's bounty, from heirloom vegetables to pasture-raised meats and artisanal cheeses.
Carrajung Estate co-founder Ivy Huang explains, 'With an emphasis on seasonality and sustainability, our dishes feature fresh ingredients sourced directly from nearby farms that celebrate the natural beauty and culinary richness of Gippsland. Through our food, we want to share these grower's stories.'
Haney is a master of his craft with more than 20 years culinary experience, honing his skills across a collection of USA and Australia's much-loved kitchens including Sydney's Opera Bar and Cruise Bar's Dinner in the Sky, and most recently, The Growers in Shoalhaven.
Haney's passion for cooking began at an early age, inspired by his grandmother's home-cooked meals and preserves, and the abundance of fresh, locally-sourced ingredients available around his hometown of San Diego. Chef Haney's philosophy is rooted in a deep respect for the ingredients he uses, and he is a firm believer in sustainable and ethical sourcing practices.
Throughout his career, Chef Haney has developed a signature style that blends traditional techniques with contemporary twists and global influences. His dishes are a feast for the senses, with a focus on bold flavours, vibrant colours, and elegant presentation. Outside of the kitchen, Chef Haney enjoys exploring local farmers markets, camping and foraging for new ingredients and seeking out inspiration for his next culinary masterpiece.

Grand Mercure Hanoi Opening Marks Brand Debut in Hanoi, Vietnam's Vibrant Capital City
Accor recently celebrated the opening of Grand Mercure Hanoi, a new premium hotel in which local Indochinese style, Western neoclassical beauty and world-class amenities blend harmoniously to reveal Vietnam's rich cultural heritage to visitors, has opened its doors.
Ideally positioned in the heart of the city, close to the Temple of Literature and within walking distance of the Imperial Citadel of Thang Long and Ho Chi Minh's Mausoleum, this characterful and culturally-immersive hotel allows global explorers to uncover the heart and soul of Hanoi – a city with over 1,000 years of history. The hotel's interior design concept is inspired by rice, the iconic grain which has come to symbolise the spirit of Vietnam's villages and its people. From the shimmering water-filled fields and hillside terraces, where rice is grown, to the colour and shape of the individual grains, this iconic symbol is showcased in many elements throughout the hotel, including the walls, ceilings and tapestries.
Throughout their stay guests can also admire the skill of local artisans with lacquerware from Hạ Thái lacquer village, Chu Dau pottery from Hai Duong province and Bat Trang ceramics, which are on display all around the hotel, from lobby tables to in-room lamps, hallway vases and more. Inspired by the architecture of the Temple of Literature, splashes of red and yellow, Vietnam's auspicious colours representing prosperity and affluence, can be seen throughout the hotel.
Within this treasure trove of arts and crafts, a choice of 181 rooms and suites ranging from the graceful 27-square metre Deluxe Rooms to the grand 116-square metre Presidential Suite await travelers.
